It's for you, the region and the passion that we have that every day we create a meal that brings out the smells, the traditions and the culture from this region. With help from local producers, we received citrus fruit, vegetables, cheeses, yogurts, aromatic herbs, meat cattle raised in local fields and olive oil tradicionally produced as our ancestors did.
It was through the search that we arrived to Sado where we found our oysters and the native rice. We went to the estuary of Setúbal, where fish and seafood abound. Within a 50 km radius and from a sustainable strategy, the Chef Miguel Laffan has combined our heritage with 500 years of travel, spices and adventures that distinguish the modernity and irreverence in his kitchen.
